Tropical Chicken Skewers with Perfectly Pineapple
Piña Colada Sauce
Yields: 12 skewers

Ingredients:
For the Chicken Skewers:
1 lb. boneless, skinless chicken breasts, cubed
1 cup pineapple juice
1/2 cup Perfectly Pineapple wine
1/2 cup coconut milk
Spices (to taste): garlic powder, onion powder, paprika, salt, pepper
12 wooden skewers (soaked in water for 30 minutes)
12 cherry tomatoes
1 pineapple, cored and cubed
1 green bell pepper, cored and cubed
For the Piña Colada Sauce:
1 cup crushed pineapple
1 cup piña colada bar mix (example: Mr. & Mrs. T's)
2 tablespoons lime juice
1/4 teaspoon salt
1/4 cup unsweetened shredded coconut
2 tablespoons confectioners' sugar (optional, for extra sweetness)
1/4 cup Perfectly Pineapple wine
1/2 cup sour cream
1/2 cup full-fat Greek yogurt (lemon flavor is fine)
Cornstarch slurry: 1 tablespoon cornstarch + 2 tablespoons cold water
Instructions:
Marinate the chicken:
In a bowl, combine the cubed chicken, pineapple juice, Perfectly Pineapple wine, coconut milk, and spices. Marinate for at least 30 minutes.
Make the sauce:
In a saucepan, combine the crushed pineapple, piña colada mix, lime juice, salt, shredded coconut, confectioners' sugar (if using), and Perfectly Pineapple wine.
Bring the mixture to a simmer over medium heat.
Slowly whisk in the cornstarch slurry and cook, stirring constantly, until the sauce thickens.
Remove the sauce from the heat and let it cool completely.
Assemble the skewers:
Thread the marinated chicken, cherry tomatoes, pineapple chunks, and green bell pepper pieces onto the soaked skewers.
Cook the skewers: Grill or bake the skewers until the chicken is cooked through (internal temperature of 165°F/74°C).
Finish the sauce:
In a separate bowl, whisk together the sour cream and Greek yogurt.
Once the sauce is completely cool, gently fold in the dairy mixture.
Serve:
Drizzle the cooked chicken skewers with the piña colada sauce and enjoy!
Notes:
